Before lighting the oven, please check that the smoke conduit is perfectly
clean in order to obtain appropriate draw.
When lighting the oven, open the primary air intake completely by moving
the valve lever to the right and open the draw valve completely. Once
normal combustion levels have been achieved, you may require different
cooking temperatures depending on the food being cooked. Cooking
temperatures in the oven can be adjusted by regulating the number of
logs, regulating the primary combustion air intake and closing the draw
valve. This will enable users to
obtain the desired temperature and
maintain it as long as required for
cooking purposes.
Always control oven temperature by
means of the thermometer installed
on the door.
We recommend a slow fire for 3 to 4
hours when lighting-up for the first
time. This will help stabilise the
different components and avoid any
possible breakages.
When lighting for the first times, you
may notice smells polymerisation of
the paint or lining covering certain parts of the device. This is normal and
will disappear after lighting the oven 3 or 4 times.
The Santacruz and Aranda oven models that feature metal lining include a

"stove" function. In order to
take advantage of the heat
generated by the Oven, a
number of air intakes have
been installed at the bottom
of the lining that, by means
of convection, force hot air
to flow from the top outlets.
This

the walls of the lining and
the second is to generate
heat that is transferred to
